St. Ignatius Seniors: Inexpensive egg substitutes
To replace eggs in baking and cooking, try the following: applesauce or mashed banana can be used in quickbreads, muffin and pancakes – use 1/4 cup for each egg in the recipe.
Plain yogurt or buttermilk can be used in cakes, cookies and drop cookies. Because yogurt and buttermilk contain acid, they can also be used as leavening agents when adding baking soda or baking powder. Use 1/4 cup of yogurt or buttermilk to replace one egg. Add 1/4 teaspoon baking soda or baking powder per quarter cup for leavening.

Main dishes served at the center include: pigs-in-a-blanket and baked beans, Feb. 14; spaghetti and green salad, Feb. 18; turkey with stuffing ans sweet potatoes, Feb. 19; and pork chops, Feb. 21.

Menus for the month are available in the entryway of the center and everyone is welcome (young and old). Come enjoy a delicious meal and good conversation.
