More on egg substitutions: For binding (to hold shape and stick e.g, meatloaf) add one tablespoon of flax or chia seed plus three tablespoons of water (combine and let sit for five minutes). Another option is plain gelatin plus two tablespoons of water – do not combine the two until ready to use.

Other options to cut back on eggs: two egg whites is equal to one whole egg. Also one-quarter commercial egg substitute is equal to one whole egg.

An afternoon movie will be screened at 1:30 p.m. Feb. 21. Come for lunch and stay to watch a movie – tentatively “His Girl Friday” with Cary Grant and Rosalind Russell. No cost; free-will donation welcome.

Our next bingo date is March 8. Game Day is planned for March 14; stay tuned for more information.

Main dishes served at the center include: pork chops, Feb. 21; turkey and wild rice soup, Feb. 25; and fish with macaroni and cheese, Feb. 28.
